Subject to Change "Wild Child" Chillable Red
Subject to Change Winery's "Wild Child" Carignan is a vibrant and natural wine crafted from Carignan grapes harvested from the Perenti Vineyard in Green Valley, Solano County, California. These old vines, planted in 1960, grow in well-drained Conejo series soils. The winemaking process involves foot-crushing half of the grapes whole-cluster, while the other half remains whole. Fermentation occurs in a mix of small open-top fermenters and a large stainless steel fermenter, with daily pump-overs and occasional foot treading until fermentation completes. The wine is then aged for 7 months in a 9000L old foudre and bottled unfined, unfiltered, and without added sulfur. This results in a crystalline wine with sparkling platinum tones, offering aromas of red fruits like cherry and cranberry, accented by soft leathery notes. The palate is funky, acidic, and jammy, making it a refreshing and crushable red wine, especially when slightly chilled. It pairs excellently with grilled chicken sausage and is perfect for enjoying on a chilly evening.
