This sake is a striking example of how time and tradition can shape something truly remarkable. Brewed in a traditional cedar tank by Niigata’s historic Imayo Tsukasa brewery, "Hito to Ki to Hitotoki” carries a beautiful double meaning: “Hito to Ki” translates to “People and Tree,” while “Hitotoki” means “A Moment in Time.”
In the glass, it shows a pale golden hue with layered aromas of green apple, lemon oil, white truffle, caramel, mandarin blossom, mint, and sandalwood. The palate is broad and silky, offering notes of peach, citrus, spice, and a gentle, nutty umami. A touch of vibrant acidity leads to a long, refined finish. Reminiscent of an aged white Burgundy, this sake is a perfect match for shellfish, creamy dishes, or simply enjoyed on its own. So complex and elegant!
