Hild Elbling Sekt Brut

Hild’s Elbling Sekt Brut is a sharply focused and intensely refreshing sparkling wine, defined by its high acidity and minerality. On the nose, it presents bright notes of lemon pith, quince, and quinine, with an almost effervescent clarity reminiscent of sparkling water. The palate, while slightly riper, maintains a crisp and direct character, making it an invigorating and thirst-quenching expression of 100% Elbling. Sourced from the Upper Mosel, this wine is shaped by limestone soils rather than the slate typically associated with the Mosel, giving it a unique structural purity.  

The Upper Mosel remains relatively unknown, even among wine enthusiasts, as it diverges significantly from the classic Riesling-dominated image of the region. Instead of slate, the vineyards here rest on limestone, geologically linked to Chablis and Sancerre. And instead of Riesling, the local winemaking tradition revolves around Elbling—one of Europe’s oldest grape varieties. In this region, Elbling is more than just a grape; it is a cultural staple, valued for its rigorous acidity, joyful simplicity, and straightforward honesty. Comparisons to Gamay or Muscadet capture its spirit, though its defining feature is an electrifying, chalky acidity that has long been the signature of the region’s wines.  

Matthias Hild, a passionate advocate for Elbling, farms five hectares in the quiet village of Wincheringen. A mix of scholar, farmer, and free spirit, he has dedicated himself to preserving the region’s old, terraced Elbling vineyards—an effort that is both romantic and financially impractical. His wines, particularly the bone-dry "Zehnkommanull" (which refers to its consistent 10% ABV or lower), embody a vanishing tradition. Despite their exceptional quality and historical significance, they often remain overlooked, quietly occupying the shelves of affordable wines, waiting to be discovered.
