Frédéric Cossard's Pinot Noir blends forty-year-old vines from Volnay and fifty-year-old vines from Nuits-Saint-Georges. Fermented as whole bunches for two weeks, it undergoes a brief rest in concrete eggs. The wine, reflecting the vintage, is pale, lithe, and fragrant, offering notes of raspberries, minerals, and spice. Cossard, a vibrant and passionate character, founded Domaine de Chassorney in 1996, now comprising ten hectares of organically farmed vines. Acting as a négociant, he sources fruit from top Burgundian vineyards. The focus on organic practices and unique winemaking methods, like using concrete eggs, results in wines with rare liveliness, purity, and detail.
