Champagne Boutillez-Guer Accent Tonique Extra Brut NV

Meet Manon Boutillez-Guer, a winemaker from a family that’s been tending vines in Villers-Marmery for over 500 years. After a stint as a nurse, she returned to her roots in 2018, diving into winemaking with passion. By 2020, she launched her first micro cuvées, and in 2021, she earned an HVE/VDC certification for her commitment to organic and biodynamic farming. Manon loves to follow the moon cycles for bottling and disgorging, and she's all about boosting the vineyard’s biodiversity.

This bubbly delight is crafted from 80% Chardonnay from the 2020 harvest, blended with 20% reserve wine. The grapes come from her cherished plots in Villers-Marmery, specifically les Pucelles and les Couloirs. Vinified in tanks with no fining and just a light filtering, this Champagne has a touch of low sulfur added during disgorging.

When you pop the cork, expect a playful bouquet of pepper, rose petal, cucumber, and bergamot. On the palate, you’ll find intriguing notes of juniper berry, grapefruit, and a peppery-ginger zing, almost reminiscent of a gin.
