Azizam Wines "Zamboor"
Azizam Wines Zamboor is a soulful, climate-conscious expression of winemaking, crafted by Maryam Hariri, a former climate-change policymaker turned winemaker. Made from 85% Mission and 15% Grenache Blanc, this wine highlights uniquely Mexican grape varietals sourced from small-scale, sustainable farms in Valle de la Grulla and San Vicente. The grapes undergo a 10-day whole-cluster maceration in concrete lagars and stainless steel, followed by spontaneous fermentation with native yeasts. Bottled unfiltered with no added SO₂, Zamboor is a pure, living wine that reflects its terroir.
Bright and juicy, it bursts with notes of sun-ripened strawberries, orange peel, and wild herbs, balanced by vibrant acidity and a light, refreshing texture. Maryam’s approach fuses her Persian winemaking heritage with ancient techniques—hand destemming, natural fermentation, and aging in traditional vessels like tinajas and lagars—resulting in wines that are as authentic as they are expressive. Serve chilled and let Zamboor transport you to Mexico’s wild, sun-drenched vineyards.
