KATORI is the oldest sake in the Terada Honke lineup, named after the Katori Jingu shrine and traditionally offered as omiki, or sacred sake. Crafted in the classic kimoto-zukuri style, it’s made with low-polished (10%), naturally farmed rice that encourages a lively, wild fermentation driven by native microorganisms. The result is a rich, vibrant sake with layered umami, bright acidity, and a distinctively earthy, expressive character. Gentle warming brings out its depth even further, revealing the full complexity of this historic, hands-on brewing tradition.
