A bespoke collaboration born between Santa Cruz cool-climate specialist Ryan Stirm and Santa Monica’s laid-back Offhand Wine Bar, "Birds of Paradise" is low-intervention California winemaking tailor-made for coastal drinking. Showcasing Stirm’s signature focus on site-expressive, naturally farmed Central Coast fruit, this limited-edition release is crafted using native yeast fermentations and minimal cellar handling to preserve maximum freshness and vibrancy.

Unfined and unfiltered, it opens with an inviting array of bright orchard fruit, tropical aromatics, and a subtle zesty citrus drive. On the palate, mouthwatering acidity meets a clean, light-footed textural finish that keeps every sip bright and lively.
