The Gregoletto family has been tending vines in the hills of Premaor di Miane near Valdobbiadene since the 1600s. Their Prosecco comes from prime DOCG vineyards but is bottled under crown cap, a traditional choice that forgoes the official label but not the quality.
Gregoletto uses the traditional sui lieviti (aka col fondo) method: the wine is fermented in tank, then bottled with grape must to undergo secondary fermentation, unfiltered and undisgorged. This labor-intensive approach is rare today but delivers a bone-dry, vibrant wine bursting with freshness and texture. Expect notes of lime, green apple, and crushed stones, with zippy acidity.
