Laherte Empreintes 2017 Millésime Champagne is a distinctive blend from the village of Chavot, capturing the essence of its unique terroir each year. It consists of an equal mix of Chardonnay and Pinot Noir, each bringing unique characteristics to the blend. The Chardonnay, including a third of the muscaté variety, is sourced from Les Chemins d'Epernay, which features clay soils with a silty surface layer over chalky subsoil, planted in 1957. The Pinot Noir comes from Les Rouges Maisons, characterized by deep soil with clay, flints, schists, and chalky subsoil, planted in 1983.

Vinified with respect for natural processes and ecological methods, the grapes are handpicked at peak ripeness and pressed traditionally. The wine undergoes alcoholic fermentation in barrels, but notably, malolactic fermentation is omitted to preserve the grape's natural acidity. It is aged on fine lees, adding complexity. The final product is disgorged by hand with a modest dosage of 3.5 grams per liter, leading to a champagne that Jancis Robinson describes as having marked acidity, a crystalline structure, and a fresh, racy profile reminiscent of the Saar style. This results in a champagne that is super fresh and focused, showcasing the distinctive qualities of its terroir.

Medium-bodied and zesty with citrus and mouthwatering chalky earth, it’s lively on the palate, with a pinpoint mousse, a long finish, and a hint of custardy texture to balance it out.
