Olive Junmai Ginjo is the star of this set - a bright, coastal-feeling sake from Kawatsuru in Kagawa, brewed with Sanuki olive yeast (a local strain isolated from Kagawa olives) which gives lift and freshness rather than olive flavor. Expect juicy notes of musk melon, green pear and white flowers with hints of starfruit, grass and a light saline snap, reading almost like a crisp white wine. Specs land it on the fresh/fruity side: junmai ginjo made from Sanuki YoiMai rice polished to 55%, about 14% ABV, SMV around −3.5 and acidity near 2.3. It shines chilled in a white-wine glass with sushi, crudo, oysters, tempura or herby Mediterranean plates. Pour your sake in the beautiful footed sake cups, light some handmade incense and nibble on some Fossa chocolate. Relax and enjoy the moment.
