In the village of Saint-Bris-le-Vineux near Chablis, the Goisot family leads the revival of Burgundy’s Yonne region, crafting wines of purity and precision from the same Kimmeridgian limestone soils that define Chablis. Certified organic and biodynamic since 1990, Jean-Hugues, Ghislaine, and their son Guilhem Goisot champion low yields, hand harvesting, and natural winemaking to express their cool-climate terroir. Whites are fermented with wild yeasts in stainless steel and oak, preserving their mineral-driven freshness, while reds undergo long, gentle macerations for depth and finesse. The result is a collection of elegant, vibrant wines that reflect the Goisot family’s deep respect for their land and its ancient roots.

Made from 100% Aligoté vines aged 35–90 years and rooted in fossil-rich clay soils, this is a serious, terroir-driven expression of Burgundy’s “other” white grape. Fermented with native yeasts and aged on fine lees in stainless steel, it shows notes of apple blossom, orange zest, and wet limestone. The palate is balanced and textured, with a waxy richness, a touch of bitter lemon, and a subtle spice on the elegant finish.
