Toji Miho Imada painstakingly revived this lost grain from just a handful of seeds, partnering with local farmers who had to completely relearn the forgotten agricultural methods required to grow it. Today, Imada Shuzo remains the only brewery in the world crafting sake from this historic rice, yielding a deeply expressive pour that captures both a lost legacy and a master craftsperson’s vision.
