Fukucho "Forgotten Fortune" Junmai Sake

On the palate, a lush, tropical sweetness merges seamlessly with a clean, flinty mineral character, offering an extraordinary balance of bright fruit, rich umami, and a crisp, lingering finish.

What makes this sake truly extraordinary is the legendary grain in the bottle. Brewed using Hattanso, an ancient heirloom rice that sits at the ancestral root of several modern sake varieties; it had been entirely abandoned for over a century due to how difficult it was to cultivate. Toji Miho Imada painstakingly revived this lost grain from just a handful of seeds, partnering with local farmers who had to completely relearn the forgotten agricultural methods required to grow it. Today, Imada Shuzo remains the only brewery in the world crafting sake from this historic rice, yielding a deeply expressive pour that captures both a lost legacy and a master craftsperson’s vision.
