Since its launch just a few years ago, Daiyame has become a standout in the rising wave of lighter, fruit-forward imo shochus that are taking bars and izakayas in Japan by storm. By using a unique aging technique for their sweet potatoes—known as koujuku—Hamada Shuzo coaxes out vibrant, juicy aromas reminiscent of lychee, muscat, and rosewater. These lush ester-driven notes are carefully retained thanks to low-temperature vacuum distillation, a rare method used by fewer than 1% of sweet potato shochu makers.
