Named after the Japanese onomatopoeia for fizzing bubbles, Bijofu "Schwa!" This is an exceptionally crisp, sparkling sake crafted by Hamakawa Shoten in Kochi Prefecture. Made with premium Matsuyama Mii rice milled to 55% and brewed using ultra-soft local well water, this light-bodied sparkling bottle opens with clean, delicate aromas of green apple and fresh rice cream. On the palate, a soft, natural sweetness is instantly enlivened by a fine, vigorous effervescence that keeps the finish dry, zesty, and infinitely refreshing.
