The Aperitivo Cappelletti, affectionately referred to as "Specialino" by locals, is potentially the oldest style of classic red bitter still being produced. Distinct from its larger commercial counterparts, it is less sweet, has a drying finish, and maintains a natural crimson color from carmine along with a wine-based vinous texture. This gives it a vibrant, flavorful profile with bitter undertones, making it ideal for creating dry and refreshing Negronis or Spritzes. Produced just outside Trento in Alto Adige by the Cappelletti family, who also create various other aperitivi and amari, Cappelletti has become a staple in the region of Triveneto where the modern "Spritz" has evolved.
