Tokki Soju, founded by Brandon Hill in Brooklyn in 2016, was the first American distillery to produce traditional rice soju. Combining modern distillation technology with historic Korean soju production methods, Hill aimed to elevate this classic Korean spirit on the global stage. After initially mastering traditional Korean fermentation and distillation methods in Seoul, Hill recognized a gap in the U.S. market for high-quality soju, particularly among high-end Korean restaurants. This led to the creation of Tokki Soju, commissioned by a Brooklyn restaurant seeking a traditional, high-caliber soju.

Rapidly outgrowing its original facility, Tokki Soju moved its main operations to Chungju, South Korea, in 2019, deemed the most appropriate location for crafting this historic spirit. In 2022, Tokki Soju also re-established a U.S. presence in Rohnert, California, where they continue to produce soju using 100% glutinous rice sourced from Sacramento Valley. This rice undergoes a meticulous production process involving cooking, fermentation with hand-cultivated nuruk, and distillation in a copper hybrid still, focusing on producing a purer soju by only using the heart of the distillate and bottling without additives.

Today, Tokki Soju remains dedicated to producing unadulterated, traditionally-inspired soju and has expanded its range to include a Korean-inspired dry gin under their Western spirits brand, Sonbi.
