Wild Arc 2022 Florescence Concord Chamomile

A positively bloooming zero-zero botanical spritzer to honour beginnings, middles and ends. Brand new to Ontario, please welcome the fiercely farm-forward bevies of Wild Arc! Situated on 10 hectares in the Hudson Valley, operators Crystal and Todd are working with regenerative and biodynamic practices to create their stunning lineup out of fruits, flowers and reverie. Using as much of their yield as they can, here, homegrown chamomile adds a new element to the intriguing, nostalgic flavour of juicy concord, sourced from the organic Buzzard Crest Vineyard in the Finger Lakes. To create ‘Florescence’, chamomile was infused directly into the base wine for three months before being strained out and blended with two week, chamomile infused grape spirit. The wine was then dosed with organic wildflower honey and bottled to re-ferment and create trouncing bubbles. Grape jelly perfume, patchouli musk, flower stem bitters, bubble gum chew meets honeycomb wax & your first time listening to the Cranberries on tape. Enjoy while researching your new obsessive interest, ikebana, the art of floral arrangement.
