The Priscus is an old nobleman of Sangiovese, hailing back to tradition when this most typical of Tuscan varieties produced wines of lighter colour and delicate tannins. It’s born from a careful selection of ancient Sangiovese from old and younger vines farmed biodynamically, it ferments spontaneously with the skins for 15-20 days, sees a “batonnage sur lies” of another 6 and then ages in large wood for a few more months. Deeply expressive with sweet berries, light spices, iris petals, pomegranate chutney, gamey notes and complex balsamic accents.
